Prepare Chicken
Slice the chicken breasts into strips, approximately 1 inch wide.

Bread the Chicken
Dredge each chicken strip first in flour, shaking off the excess, then dip in the beaten eggs, and finally coat with breadcrumbs. Ensure each piece is fully covered.

Heat Oil
In a large frying pan, heat the cooking oil over medium-high heat until hot. You can test the oil by dropping a breadcrumb in; if it sizzles, it’s ready.

Fry the Chicken
Carefully place the breaded chicken strips in the hot oil, cooking in batches if necessary. Fry each side for about 4-5 minutes or until golden brown and cooked through.

Drain and Serve
Remove the chicken fingers from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm.
Blue Cheese Dressing

Combine Ingredients
In a medium bowl, combine the blue cheese, mayonnaise, sour cream, lemon juice, and garlic powder.

Using a fork or a whisk, mix the ingredients together until well combined. If you prefer a smoother dressing, you can blend it until desired consistency.

Add salt and black pepper to taste. Adjust the seasoning according to preference.

Cover the dressing and refrigerate for at least 30 minutes to allow the flavors to meld.
