Preparing the Fries

    Cutting the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick strips, about 1/2 inch wide.

    Soaking the Potatoes

    Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch. This will help them become crispier when fried.

    Drying the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove moisture.

    Heating the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Frying the Potatoes

    Carefully add the dried fries to the hot oil in batches. Fry them for about 5-7 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

    While the fries are still hot, sprinkle them with salt to taste.

Assembling the Cheese Fries

    Preheat your oven to 400°F (200°C). Arrange the hot fries on a baking sheet. Sprinkle the mozzarella and cheddar cheese evenly over the fries.

    Place the baking sheet in the preheated oven and bake for 5-10 minutes, or until the cheese is melted and bubbly.
