Preparation of Chicken

Marinate the Chicken
In a large bowl, combine olive oil, paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt. Add the chicken breasts and toss to coat evenly. Cover and let marinate in the refrigerator for at least 30 minutes.

Preheat the Grill
While the chicken is marinating, preheat your grill to medium-high heat.

Grill the Chicken
Once the grill is hot, remove the chicken from the marinade and discard any leftover marinade. Place chicken breasts on the grill. Cook for about 6-7 minutes on one side, then flip and cook for another 6-7 minutes or until the internal temperature reaches 165°F (75°C).

Rest the Chicken
Remove the chicken from the grill and allow it to rest for 5 minutes before slicing.

Prepare the Sandwich
To assemble, place a few lettuce leaves on the bottom of each serving plate. Slice the grilled chicken breasts and place on top of the lettuce. Add slices of tomato and pickles. If desired, add a slice of cheese on top.

Serve with Dressing
Serve the blackened chicken sandwich with blue cheese or ranch dressing on the side for dipping.
