Prepare the Chicken Salad
In a large mixing bowl, combine the shredded cooked chicken breast, chopped walnuts, mayonnaise, finely chopped celery, halved grapes, Dijon mustard, salt, and black pepper.

Mix Ingredients
Stir the mixture until all ingredients are well combined and evenly coated with the mayonnaise.

Assemble Sandwiches
Lay out slices of bread, place a lettuce leaf on each slice, and generously spoon the walnut chicken salad onto the lettuce. Top with another slice of bread to complete the sandwich.

Preheat Oven
Preheat your oven to 375°F (190°C).

Season Chips
In a large bowl, toss the potato slices with olive oil, salt, paprika, and black pepper until evenly coated.

Bake Chips
Spread the seasoned potato slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
