Preparation of the Base

Heat the Cream
In a medium saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.

Infuse Vanilla
While the cream is heating, split the vanilla bean lengthwise and scrape out the seeds. Add both the seeds and the pod to the cream once it is simmering. Remove from heat and let it steep for 15 minutes.

In a mixing bowl, whisk together the egg yolks and 1 cup of granulated sugar until the mixture is pale and slightly thickened.

Combine Mixtures
After the cream has steeped, remove the vanilla pod. Gradually pour the warm cream into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling.

Strain the combined mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any curdled bits and ensure a smooth crème brûlée base.

Bake in the preheated oven for 30-35 minutes, or until the edges are set but the center is still slightly jiggly.

Once the crème brûlée has set in the refrigerator, sprinkle 1 teaspoon of granulated sugar on top of each ramekin. Using a kitchen torch, caramelize the sugar until it forms a hard, golden crust.
