Method

Steak Preparation

    Marinate the Steak

    In a bowl, combine olive oil, salt, black pepper, and red pepper flakes. Add the flank steak and coat well. Let marinate for at least 30 minutes.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the marinated flank steak for about 5-7 minutes on each side, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing.

Chimichurri Roja Preparation

    Make the Chimichurri

    In a food processor, add parsley, cilantro, garlic cloves, red wine vinegar, and salt. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until combined. Add red pepper flakes and black pepper to taste.

Frites Preparation

    Prepare the Potatoes

    Peel and cut the potatoes into thin strips. Rinse in cold water to remove excess starch and pat dry with a towel.

    Fry the Potatoes

    In a large pot, heat vegetable oil to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove from oil and drain on paper towels. Sprinkle with salt while still hot.

Sandwich Assembly

    Assemble the Sandwich

    Slice the crusty bread or baguette in half lengthwise. Layer arugula, sliced flank steak, white cheddar cheese, and pickled onions. Drizzle with chimichurri roja before closing the sandwich.

    Serve

    Cut the sandwiches in half and serve with frites and chips on the side.
