    Prepare the Steak

    Season the N.Y. strip steak with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat until hot.

    Cook the Steak

    Add the steak to the skillet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

Eggs

    Prepare the Eggs

    In a non-stick skillet, melt butter over medium-low heat. Crack the eggs into the skillet and season with salt and black pepper.

    Cook the Eggs

    Cook the eggs according to your preference (sunny-side up, over-easy, etc.), about 2-4 minutes. Remove from heat.

Crispy Potatoes

    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Rinse in cold water and pat dry.

    Cook the Potatoes

    Heat olive oil in a skillet over medium heat. Add the diced potatoes, season with salt and paprika, and cook, stirring occasionally, for about 15-20 minutes until crispy and golden brown.

Hollandaise Sauce

    Prepare the Hollandaise

    In a heatproof bowl, whisk together egg yolks and lemon juice until thick. Place the bowl over a pot of simmering water, ensuring the bowl does not touch the water.

    Make the Sauce

    Slowly drizzle in melted butter while whisking constantly until the sauce is thick and creamy. Season with salt and cayenne pepper to taste.
