Homemade Marshmallow

Prepare the Gelatin
In a small bowl, sprinkle the gelatin over 1/4 cup of cold water and let it bloom for about 5 minutes.

Make the Syrup
In a saucepan, combine the granulated sugar, corn syrup, and remaining 1/4 cup of water. Cook over medium heat, stirring until the sugar dissolves. Bring to a boil and cook until the mixture reaches 240°F (115°C) on a candy thermometer.

Combine Gelatin and Syrup
Remove the syrup from heat and stir in the bloomed gelatin until fully dissolved.

Whip the Mixture
In a mixing bowl, beat the syrup mixture with a stand mixer on high speed until it becomes thick and fluffy, about 10-15 minutes. Add the vanilla extract.

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Dry Ingredients
In a large bowl, whisk together the whole wheat flour, brown sugar, baking powder, baking soda, and salt.

Combine Mixtures
Add the wet mixture to the dry ingredients and stir until a dough forms.

Roll and Cut
Roll the dough out on a lightly floured surface to about 1/8 inch thick. Cut into squares or rectangles and place on a baking sheet.

Bake
Bake in the preheated oven for about 10-12 minutes or until lightly golden. Let cool.
Chocolate Cremeux

Heat the Cream
In a saucepan, heat the heavy cream and milk until just simmering.

Melt the Chocolate
Place the bittersweet chocolate in a heatproof bowl. Pour the hot cream mixture over the chocolate and let it sit for a minute to melt.

Combine with Egg Yolks
In a separate bowl, whisk together the egg yolks and granulated sugar. Gradually whisk the melted chocolate mixture into the egg yolks.

Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens slightly, about 5 minutes.

Chill
Strain the chocolate mixture through a fine sieve into a bowl. Cover and chill in the refrigerator for at least 2 hours.
