Quiche Crust Preparation

    Make the Pie Crust

    In a mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter, and mix until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add the ice water, one tablespoon at a time, mixing until the dough holds together. Do not overwork it. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Quiche Filling Preparation

    Sauté Vegetables

    In a skillet over medium heat, sauté the diced onion and sliced mushrooms until soft, about 5 minutes. Add the spinach and cook until wilted, then remove from heat.

    Mix Egg Filling

    In a large bowl, whisk together the eggs, heavy cream, salt, black pepper, and nutmeg. Fold in the sautéed vegetables and shredded cheese.

Quiche Assembly and Baking

    Preheat your oven to 375°F (190°C).

    On a floured surface, roll out the chilled dough into a circle to fit your pie dish. Transfer the dough to the dish and trim any excess.
