Pancakes
Salted Caramel Apples
Espresso Whipped Cream
Method
Pancakes
- 1
Prepare the Batter
In a large mixing bowl, whisk together the flour, baking powder, pumpkin pie spice, sugar, and salt until well combined.
- 2
- 3
Mix Batter
Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; some lumps are okay.
- 4
Cook Pancakes
Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.
- 5
Serve
Stack pancakes on a plate and keep warm while you cook the remaining batter.
Salted Caramel Apples
- 6
Prepare the Apples
Wash and dry the apples thoroughly. Insert a wooden stick into the center of each apple, ensuring it goes about halfway through.
- 7
- 8
Add Cream and Butter
Once the sugar is melted, carefully add heavy cream and butter, stirring continuously until smooth. Remove from heat and stir in sea salt.
- 9
Coat Apples
Dip each apple into the caramel, allowing excess to drip off. Place the caramel-coated apples on a parchment-lined baking sheet to cool.
Espresso Whipped Cream
- 10
Whip the Cream
In a mixing bowl, pour the heavy cream, brewed espresso, powdered sugar, and vanilla extract.
- 11
Beat Until Stiff Peaks Form
Using a hand mixer or stand mixer, beat the mixture on medium-high speed until stiff peaks form, about 3-5 minutes.
- 12
Serve
Spoon the whipped cream over the pancakes or serve on the side for dipping with caramel apples.
