Preparing the Pork Chops

    Marinate the Chops

    In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Mix well. Add the pork chops and coat them thoroughly with the marinade. Cover and let them marinate in the refrigerator for at least 30 minutes.

    Preheat the Grill

    While the pork chops are marinating, preheat your grill to medium-high heat.

    Grill the Chops

    Once the grill is hot, remove the pork chops from the marinade and place them on the grill. Grill for about 6-7 minutes on each side or until the internal temperature reaches 145°F (63°C).

    Rest the Chops

    Remove the pork chops from the grill and let them rest for 5 minutes before serving.

Preparing the Seasonal Veggies

    Chop the Veggies

    While the pork chops are grilling, chop the zucchini, bell pepper, and carrot into bite-sized pieces.

    Season and Grill the Veggies

    In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper. Add the seasoned veggies to the grill for the last 5 minutes of the pork chop cooking time. Grill until tender and slightly charred.

Serving

    Place the grilled pork chops on a plate alongside the grilled seasonal veggies. Serve warm and enjoy!
