Salmon Preparation

Prepare the Salmon
Season the salmon fillets with salt and black pepper on both sides.

Heat the Pan
In a large skillet, heat the olive oil over medium-high heat.

Sear the Salmon
Once the oil is hot, add the salmon fillets and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.

Finish the Sauce
Stir in lemon juice and chopped parsley. Cook for an additional minute, then remove from heat.
Quinoa Pilaf Preparation

Sauté Vegetables
In a medium saucepan, heat olive oil over medium heat. Add chopped onion, diced carrot, and diced celery. Sauté until the vegetables are tender, about 5-7 minutes.

Cook the Quinoa
Add quinoa to the saucepan and stir for 1-2 minutes. Pour in vegetable broth, add salt and black pepper. Bring to a boil.

Simmer
Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes until the quinoa is fluffy and the liquid is absorbed.
Assembly

Plate the Dish
To serve, place a portion of quinoa pilaf on each plate, top with a seared salmon fillet, and drizzle with the lemon butter sauce.
