    Prepare the Olives and Accompaniments

    In a mixing bowl, combine the mixed olives, crumbled feta cheese, drained capers, and peeled pearl onions. Toss gently to mix all the ingredients together.

    Prep the Lemon

    Zest the lemon using a microplane and then cut it in half to juice it. Set aside the zest and juice for the marinade.

    Combine Marinade Ingredients

    In a separate bowl, whisk together the olive oil, chopped fresh thyme, minced garlic, red pepper flakes, black pepper, and lemon juice. Adjust the salt to taste.

Marination Process

    Combine and Marinate

    Pour the marinade over the olive mixture. Add the lemon zest and gently toss to coat all ingredients evenly. Cover the bowl with plastic wrap or transfer to a glass jar with a tight lid.

    Let the marinated olives sit in the refrigerator for at least 2 hours, preferably overnight, to allow the flavors to meld together.
