Prepare the Bacon
In a skillet, cook the bacon over medium heat until crispy. Remove and crumble; set aside.

Make the Mornay Sauce
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until golden. Gradually whisk in the milk, cooking until the mixture thickens, about 5-7 minutes. Remove from heat and stir in the shredded white cheddar, salt, black pepper, and nutmeg until smooth.
Assembling the Dish

Toast the Sourdough
Preheat the oven to 375°F (190°C). Place the sourdough slices on a baking sheet and toast in the oven for about 5-7 minutes, until lightly golden.

Layer the Ingredients
On each toasted sourdough slice, layer the sliced turkey, followed by the country ham, and top with sliced tomatoes.

Add Mornay Sauce
Generously pour the white cheddar mornay sauce over each assembled slice, covering all the ingredients.

Add Bacon and Bake
Sprinkle the crumbled bacon on top of the mornay sauce. Bake in the preheated oven for 15-20 minutes, or until bubbly and golden brown.

Serve the Hot Brown
Remove from the oven and let cool for a few minutes. Serve hot, garnished with additional black pepper if desired.
