Prepare the Lemons
Wash the lemons thoroughly under running water to remove any dirt or wax. Pat them dry with a clean towel.

Add the Alcohol
Pour the grain alcohol over the lemon zest in the jar. Seal the jar tightly and give it a gentle shake to mix. Store the jar in a cool, dark place for a minimum of 7 days, allowing the flavors to infuse.

Prepare the Simple Syrup
In a medium saucepan, combine the granulated sugar and water. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved. Remove from heat and let it cool to room temperature.

Combine and Strain
After the infusion period, strain the lemon zest from the alcohol using a fine mesh strainer or cheesecloth into a clean bottle. Add the cooled simple syrup to the infused alcohol and stir gently to combine.

Bottle and Age
Pour the limoncello into clean bottles, seal tightly, and refrigerate. For best flavor, allow the limoncello to age for at least 2 weeks before serving.
