Chicken Marinade

    Marinade the Chicken

    In a large bowl, combine buttermilk, hot sauce, salt, and black pepper. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

Breading

    Prepare the Breading

    In a shallow dish, mix together flour, paprika, garlic powder, onion powder, cayenne pepper, and salt. Set aside.

Cool Down Sauce

    Make the Cool Down Sauce

    In a small bowl, whisk together mayonnaise, honey, apple cider vinegar, salt, and black pepper until smooth. Refrigerate until ready to use.

Fries

    Prepare the Fries

    Preheat your oven to 425°F (220°C). Toss the cut potatoes in olive oil and salt. Spread them in a single layer on a baking sheet. Bake for 25-30 minutes or until golden and crispy, flipping halfway through.

Frying Chicken

    Fry the Chicken

    Heat oil in a deep fryer or large pot to 350°F (175°C). Remove chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing gently to adhere. Fry chicken in batches for 6-8 minutes or until golden brown and cooked through. Drain on paper towels.

Sandwich Assembly

    Assemble the Sandwich

    Slice ciabatta rolls in half. Spread a generous amount of Cool Down Sauce on the bottom half. Add fried chicken, lettuce, tomato slices, and pickles. Top with the other half of the ciabatta roll. Serve hot with fries on the side.
