Prepare the Mornay Sauce
In the same skillet, melt 4 tablespoons of butter over medium heat. Add 4 tablespoons of flour and whisk continuously for about 2 minutes until it forms a roux. Gradually pour in 2 cups of milk while whisking to avoid lumps. Continue cooking and stirring until the sauce thickens.

Add Cheese and Seasoning
Remove the skillet from heat and stir in 1 cup of Gruyère cheese, 1 cup of Asiago cheese, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of nutmeg until the cheese is melted and the sauce is smooth.

Layer the Ingredients
Preheat your oven to 375°F (190°C). On a baking sheet, lay out 4 slices of sourdough bread. Top each slice with turkey and country ham.

Add Mornay Sauce
Spoon the prepared Mornay sauce generously over each sandwich.

Add Tomato and Bacon
Slice the large tomato and place a slice on top of the Mornay sauce on each sandwich. Crumble the crispy bacon over the tomato.

Bake the Hot Brown
Bake in the preheated oven for about 15-20 minutes, or until the sauce is bubbly and golden brown.
