Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips to make fries.

Soak the Potatoes
Soak the potato strips in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Fry the Potatoes
In a large pot, heat vegetable oil to 350°F (175°C). Carefully add the potato strips in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt immediately.
Shallot-Thyme Butter Preparation

Cook the Shallots
In a small saucepan, melt the unsalted butter over medium heat. Add finely diced shallots and cook until softened, about 3-4 minutes.

Add Thyme and Season
Stir in fresh thyme leaves and salt. Cook for an additional minute until fragrant. Remove from heat.
