Method

Preparation of Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, salt, black pepper, and lemon juice. Add the salmon fillets and coat them well with the marinade. Allow to marinate for at least 15 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat, about 375°F (190°C).

  3. 3

    Grill the Salmon

Once the grill is hot, place the marinated salmon fillets on the grill. Cook for about 6-8 minutes on each side, or until the salmon flakes easily with a fork.

Preparation of Seasonal Vegetables

  1. 4

    Prepare the Vegetables

Wash and chop the zucchini, bell pepper, and asparagus into bite-sized pieces.

  2. 5

    Sauté the Vegetables

In a large skillet over medium heat, add olive oil. Once hot, add the chopped vegetables. Season with salt and black pepper to taste. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp.

Preparation of Lemon Butter

  1. 6

    Make the Lemon Butter

In a small saucepan over low heat, melt the butter. Once melted, add lemon juice, minced garlic, and chopped parsley. Stir until combined and heated through.

Serving

  1. 7

    Plate the Dish

On a serving plate, place a portion of grilled salmon, a generous serving of sautéed seasonal vegetables, and drizzle with lemon butter. Serve immediately.
