Method

Piquillo Hummus

    Prepare the Chickpeas

    Rinse and drain the canned chickpeas thoroughly.

    Blend Ingredients

    In a food processor, combine the chickpeas, piquillo peppers, tahini, garlic, lemon juice, olive oil, salt, and ground cumin.

    Blend Until Smooth

    Blend until the mixture is smooth and creamy. Adjust seasoning if needed.

    Serve

    Transfer the hummus to a serving bowl and set aside.

Marinated Artichokes

    Prepare the Artichokes

    Drain the canned artichoke hearts and place them in a bowl.

    Mix Marinade

    In a separate bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, and salt.

    Pour the marinade over the artichokes and toss to coat evenly. Let sit for at least 30 minutes.
