Filet Mignon

    Prepare the Steak

    Take the filet mignons out of the refrigerator and let them rest at room temperature for about 30 minutes before cooking.

    Season the Steak

    Season both sides of the filet mignon generously with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Steak

    Add the filet mignons to the skillet and sear for 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.

    Add Flavors

    During the last minute of cooking, add butter, crushed garlic, and thyme to the pan. Spoon the melted butter over the steaks to enhance flavor.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for 5 minutes before serving.

Mashed Potatoes

    Boil the Potatoes

    In a large pot, add the cubed potatoes and cover them with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

    Drain and Mash

    Drain the potatoes and return them to the pot. Use a potato masher to mash them until smooth.

    Stir in butter, milk, salt, and black pepper until creamy and well-combined. Adjust seasoning to taste.

Asparagus

    Prepare the Asparagus

    Rinse the asparagus under cold water and trim the woody ends.

    In a bowl, toss the asparagus with olive oil, salt, and black pepper. Spread evenly on a baking sheet.

    Roast in a preheated oven at 400°F (200°C) for 10-15 minutes until tender and slightly crispy.
