    Boil the Eggs

    Place the eggs in a saucepan and cover them with water. Bring the water to a boil over medium-high heat. Once boiling, remove from heat, cover, and let sit for 12 minutes.

    Cool the Eggs

    After 12 minutes, transfer the eggs to a bowl of ice water. Let them cool for about 5 minutes to stop the cooking process.

    Peel the Eggs

    Once the eggs are cool, gently tap them on a hard surface to crack the shell, and then peel them under running water to remove any stubborn bits of shell.

Filling Preparation

    Prepare the Filling

    Slice the peeled eggs in half lengthwise and carefully remove the yolks. Place the yolks in a mixing bowl.

    Mix Ingredients

    To the bowl with the yolks, add mayonnaise, Dijon mustard, Sriracha sauce, paprika, salt, and black pepper. Mash together with a fork until smooth and creamy.

    Add Chives

    Stir in the chopped chives or green onions until evenly distributed throughout the yolk mixture.

Assembly

    Fill the Egg Whites

    Using a spoon or a piping bag, fill each egg white half with the yolk mixture.

    Garnish

    Sprinkle additional paprika on top and garnish with a small amount of chopped chives or green onions.
