Phyllo Cups

Method

Prepare Phyllo Cups

  1. 1

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 2

    Prepare Phyllo Dough

Melt the butter and mix it with olive oil in a small bowl. Lay one phyllo sheet on a clean surface and brush it lightly with the butter-oil mixture. Layer another phyllo sheet on top and brush again. Repeat until you have three layers.

  3. 3

    Cut and Shape Cups

Using a sharp knife, cut the layered phyllo into squares (about 4x4 inches). Gently press each square into a muffin tin to create cups. Repeat with the remaining phyllo sheets.

  4. 4

    Bake the Cups

Bake the phyllo cups in the preheated oven for 10-12 minutes or until golden and crispy. Remove from the oven and set aside to cool.

Prepare Creamed Spinach Filling

  1. 5

    Cook Spinach

In a large skillet over medium heat, add the fresh spinach. Cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly. Once cool, chop the spinach and set aside.

  2. 6

    Sauté Aromatics

In the same skillet, add a little more olive oil if needed. Sauté the minced garlic and chopped shallot over medium heat until fragrant and translucent, about 2-3 minutes.

  3. 7

    Combine Ingredients

In a mixing bowl, combine the chopped spinach, sautéed garlic and shallot, cream cheese, sour cream, grated Parmesan cheese, nutmeg, salt, and black pepper. Mix until well combined and smooth.

Assemble and Serve

  1. 8

    Fill Phyllo Cups

Spoon the creamed spinach filling into each baked phyllo cup, filling them generously.

  2. 9

    Final Bake

Return the filled cups to the oven and bake for an additional 10 minutes at 375°F (190°C) until heated through and slightly golden on top.

  3. 10

    Serve

Remove from the oven and let them cool for a few minutes before serving. Enjoy your creamed spinach in phyllo cups warm!
