Crab Cakes

Prepare the Mixture
In a large mixing bowl, combine the lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, chopped green onions, and the egg. Gently fold together until well mixed.

Form the Cakes
Add breadcrumbs to the crab mixture, mixing gently until just combined. Form the mixture into patties, about 2-3 inches in diameter.

Add Sausage and Cream
Stir in the diced Andouille sausage and heavy cream once the grits are thick and creamy. Cook for an additional 5 minutes.

Finish with Cheese
Remove from heat and stir in the shredded cheddar cheese until melted. Season with black pepper to taste.
Lobster Cream

Make the Cream Sauce
Add the heavy cream and lobster meat to the pan. Stir well and bring to a gentle simmer. Season with lemon juice, salt, and black pepper, cooking for another 3-4 minutes until slightly thickened.
Poached Eggs

Prepare the Poaching Water
In a large pot, bring water to a simmer and add white vinegar.

Poach the Eggs
Crack each egg into a small bowl, then gently slide into the simmering water. Poach for 3-4 minutes until whites are set but yolks are still runny. Remove with a slotted spoon and drain on paper towels.
