Preparing the Ingredients

    Dice the Meats and Peppers

    Finely dice the ham, turkey, and piquillo peppers and set aside for use in the omelette.

    Prepare the Cheese

    Shred the cheddar cheese if not already shredded, and set aside.

Making the Black Pepper Mornay Sauce

    Melt the Butter

    In a small saucepan over medium heat, melt the butter until it is bubbling.

    Make the Roux

    Add the all-purpose flour to the melted butter and whisk continuously for about 2 minutes to form a roux.

    Add the Milk

    Gradually pour in the milk while continuing to whisk to prevent lumps from forming. Cook for an additional 2-3 minutes until the sauce thickens.

    Season the Sauce

    Stir in the black pepper and salt, then add the shredded cheddar cheese. Mix until the cheese is melted and the sauce is smooth. Remove from heat and set aside.

Cooking the Omelette

    Whisk the Eggs

    In a bowl, whisk the eggs until they are well combined and slightly frothy.

    Cook the Omelette

    Heat a non-stick skillet over medium-low heat and add a small amount of butter or oil. Once hot, pour in the whisked eggs and swirl to spread evenly.

    Once the eggs begin to set, add the diced ham, turkey, piquillo peppers, and shredded cheddar cheese to one half of the omelette.

    Carefully fold the other half of the omelette over the fillings and cook for an additional 1-2 minutes until the cheese melts and the omelette is cooked through.

    Slide the omelette onto a plate and drizzle the warm black pepper mornay sauce over the top before serving.
