Mousse Base Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate using a double boiler or microwave in short bursts, stirring frequently until smooth. Set aside to cool slightly.

    Separate the Eggs

    Carefully separate the egg yolks from the whites, placing the yolks in a large mixing bowl and the whites in a separate bowl.

    Combine Yolks and Sugar

    Add the granulated sugar, vanilla extract, and a pinch of salt to the egg yolks. Whisk together until the mixture is pale and creamy.

    Mix in Chocolate

    Once the melted chocolate has cooled slightly, pour it into the yolk mixture and stir until fully combined.

    Beat Egg Whites

    Using a hand mixer or stand mixer, beat the egg whites until soft peaks form. Gradually fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Chill the Mousse

    Divide the mousse mixture into serving dishes and refrigerate for at least 2 hours, or until set.

    Prepare the Whipped Cream

    In a chilled mixing bowl, add the heavy whipping cream, powdered sugar, and vanilla extract. Beat with a mixer on medium-high speed until soft peaks form.

    Top the Mousse

    Once the mousse has set, remove from the refrigerator and dollop the whipped cream on top of each serving. Optionally, garnish with chocolate shavings or berries.
