Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) and grease four ramekins with butter or cooking spray.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt together over a double boiler or in the microwave, stirring until smooth. Set aside to cool slightly.

  3. 3

    Whisk Eggs and Sugar

In a separate mixing bowl, whisk together the powdered sugar, large eggs, and large egg yolks until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture. Add the vanilla extract, and stir until fully combined.

  5. 5

    Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate mixture. Gently fold the dry ingredients into the wet mixture until just combined.

  6. 6

    Fill Ramekins

Evenly divide the batter among the greased ramekins, filling each about 3/4 full.

  7. 7

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft and molten.

  8. 8

    Cool Slightly

Remove the cakes from the oven and let them cool for 1 minute before inverting them onto dessert plates.

  9. 9

    Serve

Serve immediately, optionally with a scoop of vanilla ice cream or whipped cream on the side.
