Method

Prepare the Vegetables

  1. 1

    Cook the Broccoli

Preheat your grill or grill pan over medium-high heat. Toss the broccoli florets in a little olive oil, salt, and pepper. Grill for about 5-7 minutes until charred and tender, turning occasionally.

  2. 2

    Caramelize the Onions

In a skillet over medium heat, add a tablespoon of olive oil. Slice the onion and add it to the skillet. Cook, stirring occasionally, for about 15-20 minutes until the onions are golden brown and caramelized. Set aside.

Prepare the Sandwich

  1. 3

    Assemble the Sandwich

On one slice of sourdough bread, layer the grilled broccoli, caramelized onions, pickles, and sharp cheddar cheese. Drizzle with Ale8 BBQ sauce.

  2. 4

    Grill the Sandwich

Top with another slice of sourdough bread. Heat a non-stick skillet over medium heat. Add a little butter or olive oil and place the sandwich in the skillet. Grill for about 3-4 minutes on each side until the bread is golden and the cheese is melted.

Prepare the Fries

  1. 5

    Cook the Fries

Prepare the frozen French fries according to package instructions. This usually involves baking them in the oven or frying them until crispy.
