Method

For the Baked Goat Cheese

    Prepare the Goat Cheese

    Preheat your oven to 375°F (190°C). Place the goat cheese in a small baking dish.

    Mix the Topping

    In a small bowl, combine the olive oil, lemon juice, honey, thyme, salt, and black pepper. Mix well.

    Bake the Goat Cheese

    Pour the mixture over the goat cheese and bake for 15-20 minutes until the cheese is soft and slightly bubbly.

For the Marcona Almonds

    Roast the Almonds

    While the cheese is baking, place the Marcona almonds on a baking sheet, drizzle with olive oil and sprinkle with sea salt. Toss to coat.

    Bake the Almonds

    Roast in the oven for about 10-12 minutes, or until lightly golden and fragrant. Remove and let cool.

For the House Lavash Crackers

    Make the Dough

    In a large mixing bowl, combine the flour and salt. Add the olive oil and water gradually, mixing until a dough forms.

    Turn the dough onto a floured surface and knead for about 5 minutes until smooth.

    Divide the dough into smaller portions, roll each out thinly, and cut into desired shapes.
