Prepare the Dates
Preheat your oven to 400°F (200°C). Carefully slice each Medjool date lengthwise on one side and remove the pit. Make sure not to cut all the way through.

Stuff the Dates
Take about a teaspoon of goat cheese and stuff it into each date. If using, sprinkle a bit of fresh rosemary and black pepper inside the date before adding the goat cheese for extra flavor.

Wrap with Bacon
Cut the bacon slices in half. Wrap each stuffed date with half a slice of bacon, securing it with a toothpick if necessary. Place the wrapped dates on a baking sheet lined with parchment paper.

Bake the Dates
Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the bacon is crispy and browned. Keep an eye on them to prevent burning.

Drizzle with Balsamic Glaze
Once the bacon-wrapped dates are done, remove them from the oven and let them cool slightly. Drizzle with balsamic glaze just before serving for added flavor.
