Beignet Preparation

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until well combined.

    Combine Wet Ingredients

    In a separate bowl, beat the eggs, then add milk and vanilla extract. Mix until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined. Then gently fold in the crumbled bacon until evenly distributed.

    Heat Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Fry Beignets

    Using a tablespoon, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

    In a small saucepan over low heat, pour in the sweetened condensed milk. Stir continuously for about 30-40 minutes, until it thickens and turns a caramel color.
