Prepare the Marinade
In a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, and black pepper.

Marinate the Salmon
Place the Atlantic salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

Cook the Salmon
Preheat your grill or oven to 375°F (190°C). Remove the salmon from the marinade and place it on the grill or in a baking dish. Cook for 15-20 minutes, or until the salmon flakes easily with a fork. Garnish with fresh parsley before serving.
Vegetable Side 1: Roasted Asparagus

Prepare the Asparagus
Preheat the oven to 400°F (200°C). Trim the ends of the asparagus and place them on a baking sheet.

Season and Roast
Drizzle the asparagus with olive oil, and sprinkle with salt and black pepper. Toss to coat evenly. Roast in the oven for 10-15 minutes, until tender and slightly crispy.
Vegetable Side 2: Sautéed Spinach

Sauté the Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.

Cook the Spinach
Add the fresh spinach to the skillet and sauté for 3-5 minutes, stirring frequently, until wilted. Season with salt and black pepper.
