Pie Crust

Prepare the Dough
In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

Chill the Dough
Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Apples
In a large bowl, toss the sliced apples with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, flour, and vanilla extract until evenly coated.
Assemble Pie

Roll Out the Dough
Preheat your oven to 425°F (220°C). Roll out one disk of dough on a floured surface to fit a 9-inch pie pan.

Fill the Pie
Transfer the rolled-out dough to the pie pan and fill it with the apple mixture.

Top with Second Crust
Roll out the second disk of dough and place it over the filling. Seal and flute the edges, and cut slits on top for steam to escape.

In a small bowl, beat the egg with milk and brush it over the top crust.

Bake
Bake the pie in the preheated oven for 45-50 minutes or until the crust is golden brown and the apples are tender. Let cool before serving.

Slice the pie and serve it warm with scoops of vanilla ice cream on the side.
