Gradually mix in the cold sparkling water until the batter is smooth. Let it sit for about 15 minutes.

In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Coat the Fish
Dip each fish fillet into the batter, ensuring it is well coated.

Fry the Fish
Carefully place the battered fish into the hot oil and fry for about 5-7 minutes, or until golden brown and cooked through. Remove and drain on paper towels.

Peel and cut the russet potatoes into thick strips. Rinse them under cold water to remove excess starch.

Soak the cut potatoes in cold water for at least 30 minutes to achieve crispiness.
