Prepare the Steak
Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook more evenly.

Season the Steaks
Pat the steaks dry with paper towels. Rub each steak with 1 tablespoon of olive oil, then season generously with salt, black pepper, and garlic powder on both sides.

Flip and Add Butter
Flip the steaks and add 1 tablespoon of butter and the sprigs of rosemary or thyme to the skillet. Cook for another 4-5 minutes for medium-rare, or longer depending on your desired doneness.

Check for Doneness
Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130°F (54°C).

Rest the Steaks
Once cooked to your liking, remove the steaks from the heat and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute.
