Preparation
Prepare the Filet Mignon
Take the filet mignon pieces out of the refrigerator and let them sit at room temperature for about 30 minutes. This ensures they cook evenly.
Season the Meat
Pat the filet mignon dry with paper towels. Season both sides generously with salt, black pepper, and garlic powder.
Cooking
Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until shimmering.
Sear the Filet
Carefully place the seasoned filet mignon in the hot skillet. Sear for 3-4 minutes on one side until a nice crust forms.
Flip and Cook
Flip the filet mignon and continue to cook for another 3-4 minutes for medium-rare, or until desired doneness is reached.
Resting
Rest the Filet
Transfer the filet mignon to a plate and cover loosely with foil. Let it rest for 5-10 minutes before slicing to allow the juices to redistribute.
