Add Tomatoes and Spices
Add the canned crushed tomatoes, oregano, salt, black pepper, and sugar. Stir to combine.

Simmer the Sauce
Bring the sauce to a gentle simmer and reduce the heat to low. Allow to simmer for about 15-20 minutes, stirring occasionally.
- 4
Finish the Sauce
Stir in the fresh basil just before serving. Remove from heat and set aside.
Preparing the Calamari
- 5
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. This helps to remove excess moisture.
- 6
Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.
- 7
Coat the Calamari
Pour the buttermilk into another bowl. Dip each calamari ring into the buttermilk, then dredge in the flour mixture, ensuring an even coat.
- 8
- 9
Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
