Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat, around 375°F (190°C).

Grilling the Salmon

  1. 3

    Grill the Salmon

Remove the salmon from the marinade and let any excess drip off. Place the fillets skin-side down on the grill. Cook for about 6-8 minutes, then carefully flip and grill for another 4-6 minutes until the salmon is cooked through and flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prepare the Vegetables

While the salmon is grilling, wash and cut the asparagus, bell peppers, and zucchini into even-sized pieces. Place them in a bowl and drizzle with olive oil, salt, and black pepper. Toss to coat.

  2. 5

    Grill the Vegetables

Add the vegetables to the grill alongside the salmon. Grill for about 8-10 minutes, turning occasionally, until they are tender and have grill marks.

Serving

  1. 6

    Serve the Dish

Once the salmon and vegetables are done, remove them from the grill. Plate the salmon fillets with a generous serving of grilled vegetables on the side. Optionally, drizzle with more olive oil or lemon juice before serving.
