Preparation of Étouffée

    Make the Roux

    In a large heavy-bottomed pot, melt the butter over medium heat. Once melted, gradually add the flour while continuously stirring to create a roux. Cook the roux, stirring frequently, until it turns a deep brown color, about 15-20 minutes.

    Sauté the Vegetables

    Add the chopped onion, bell pepper, and celery to the roux. Sauté until the vegetables are soft, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.

    Add Crawfish and Broth

    Stir in the crawfish tails, chicken broth, Cajun seasoning, salt, black pepper, and bay leaves. Bring the mixture to a simmer and let it cook for about 20 minutes, stirring occasionally.

    Finish the Dish

    Remove the bay leaves from the pot. Stir in the sliced green onions and chopped parsley. Adjust seasoning to taste.

    Serve the Étouffée

    Scoop a generous portion of cooked white rice onto each plate and ladle the crawfish étouffée over the rice. Garnish with additional green onions and parsley if desired.
