Preparation

  1. 1

    Prepare the Blackening Seasoning

In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper. Mix well until evenly combined.

  2. 2

    Season the Redfish

Pat the redfish fillets dry with paper towels. Generously coat both sides of each fillet with the prepared blackening seasoning, pressing it into the fish to ensure it adheres well.

Cooking

  1. 3

    Heat the Pan

In a large cast-iron skillet, melt 2 tablespoons of unsalted butter over medium-high heat until bubbling and hot.

  2. 4

    Blacken the Redfish

Carefully place the seasoned redfish fillets in the hot skillet. Cook for about 3-4 minutes on one side until a dark crust forms. Flip the fillets and add the remaining 2 tablespoons of butter to the pan. Cook for an additional 3-4 minutes until the fish is cooked through and flakes easily with a fork.

  3. 5

    Serve

Remove the blackened redfish from the skillet and serve immediately with lemon wedges on the side for squeezing over the fish.
