For the Woodfired Grill

    Prepare the Marinade

    In a bowl, mix olive oil, minced garlic, chopped rosemary, lemon juice, salt, and black pepper. Stir well to combine.

    Marinate the Chicken

    Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

    Preheat the Grill

    Prepare your woodfired grill, ensuring it reaches a high temperature (about 450°F or 230°C).

    Grill the Chicken

    Place the marinated chicken thighs on the grill. Cook for 6-7 minutes on each side or until fully cooked and charred.

For the Grilled Vegetable Skewer

    Prepare the Vegetables

    Cut bell peppers, zucchini, red onion, and cherry tomatoes into suitable sizes for skewering.

    Skewer the Vegetables

    Thread the vegetables onto skewers, alternating colors and types.

    Season the Skewers

    In a small bowl, mix olive oil, balsamic vinegar, salt, and black pepper. Brush this mixture onto the vegetable skewers.

    Grill the Skewers

    Place the vegetable skewers on the grill alongside the chicken. Grill for about 10-12 minutes, turning occasionally until they are charred and tender.

For the Side Dishes

    Prepare Mashed Potatoes

    Peel and chop potatoes into quarters. Boil in salted water until tender (about 15 minutes). Drain and return to the pot.

    Mash the Potatoes

    Add butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

    Cook Basmati Rice

    Rinse basmati rice under cold water until water runs clear. In a pot, combine rice with 2 cups of water, bring to a boil, then reduce heat, cover, and simmer for 15 minutes.

    Prepare French Fries

    Deep fry or oven bake French fries according to package instructions until golden and crispy. Drizzle with truffle oil if desired.

    Prepare Sweet Potato Fries

    Slice sweet potatoes into fries, toss with olive oil, salt, and pepper. Bake at 425°F (220°C) for 20-25 minutes until crispy.
