Method
Preparing the Chicken
- 1
Cook the Chicken
Season the chicken breasts with salt and pepper. In a skillet over medium heat, cook the chicken for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let it rest before slicing.
Caramelizing the Pears
- 2
Caramelize the Pears
Peel, core, and slice the pears. In a skillet, melt the butter over medium heat. Add the sliced pears and brown sugar. Cook for about 5-7 minutes, stirring occasionally, until the pears are soft and caramelized. Remove from heat.
Making Candied Pecans
- 3
Candy the Pecans
In a small saucepan, combine the sugar and cinnamon over medium heat. Add the pecans and stir continuously until the sugar melts and coats the pecans, about 5 minutes. Spread the pecans on parchment paper to cool.
Assembling the Salad
- 4
Assemble the Salad
In a large bowl, combine the mixed greens, sliced chicken, caramelized pears, strawberries, and blueberries. Toss gently to combine.
- 5
Add Dressing
Drizzle the raspberry vinaigrette over the salad and toss again to coat all ingredients evenly.
- 6
Garnish
Top the salad with candied pecans for an added crunch.
