Method

Preparing the Hollandaise Sauce

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat until completely melted. Once melted, remove from heat and let cool slightly.

    Whisk the Egg Yolks

    In a medium-sized bowl, whisk together the egg yolks, lemon juice, Dijon mustard, and salt until well combined.

    Combine Ingredients

    Gradually pour in the melted butter while continuously whisking the mixture. Be careful not to add the butter too quickly to prevent the eggs from cooking.

    Season the Sauce

    Once the sauce is smooth and thickened, season with a pinch of cayenne pepper. Adjust salt and lemon juice to taste if needed.

    Keep Warm

    Leave the hollandaise sauce in a warm place while you prepare the eggs and Canadian bacon.

Cooking the Eggs and Bacon

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and carefully slide them into the simmering water. Cook for about 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside.

    In a skillet over medium heat, cook the Canadian bacon slices for about 2-3 minutes on each side or until they are heated through and slightly crispy.

Assembly

    On a plate, place a slice of Canadian bacon, followed by a poached egg on top. Drizzle with the prepared hollandaise sauce.
