Preparing the Hollandaise Sauce

Melt the Butter
In a small saucepan, melt the unsalted butter over low heat until completely melted. Once melted, remove from heat and let cool slightly.

Whisk the Egg Yolks
In a medium-sized bowl, whisk together the egg yolks, lemon juice, Dijon mustard, and salt until well combined.

Season the Sauce
Once the sauce is smooth and thickened, season with a pinch of cayenne pepper. Adjust salt and lemon juice to taste if needed.

Keep Warm
Leave the hollandaise sauce in a warm place while you prepare the eggs and Canadian bacon.
Cooking the Eggs and Bacon

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and carefully slide them into the simmering water. Cook for about 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside.

Cook the Canadian Bacon
In a skillet over medium heat, cook the Canadian bacon slices for about 2-3 minutes on each side or until they are heated through and slightly crispy.
