Method

Omelet Preparation

  1. 1

    Prepare the Ingredients

Gather all the ingredients for the omelet. Shred the woodfire chicken, chop the fresh basil, and dice the Roma tomatoes. Set aside.

  2. 2

    Whisk the Eggs

In a large bowl, crack the eggs and whisk them together until fully combined. Add in the salt and black pepper, mixing well.

  3. 3

    Cook the Omelet

Heat olive oil in a non-stick skillet over medium heat. Pour in the whisked eggs, tilting the pan to spread them evenly. Cook for about 2-3 minutes until the edges start to set.

  4. 4

    Add Fillings

Once the omelet is partially set, add the shredded woodfire chicken, chopped basil, diced tomatoes, and mozzarella cheese on one half of the omelet.

  5. 5

    Fold and Finish Cooking

Gently fold the other half of the omelet over the fillings. Cook for an additional 2-3 minutes until the cheese has melted and the omelet is cooked through.

  6. 6

    Serve

Carefully slide the omelet onto a plate and keep warm while you prepare the red pepper sauce.

Red Pepper Sauce Preparation

  1. 7

    Prepare the Sauce

In a blender or food processor, combine the roasted red bell pepper, minced garlic, olive oil, balsamic vinegar, salt, and black pepper.

  2. 8

    Blend the Sauce

Blend until smooth. Taste and adjust seasoning if necessary, adding more salt or pepper as desired.

  3. 9

    Serve with Omelet

Drizzle the red pepper sauce over the prepared woodfire chicken omelet before serving.
