Prepare the Salmon

    Marinate the Salmon

    In a bowl, mix olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper. Add salmon fillets to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

Grill the Vegetables

    Prepare and Grill

    Preheat the grill to medium-high heat. In a large bowl, toss the sliced zucchini, bell peppers, and red onion with olive oil, salt, and black pepper. Grill the vegetables for about 10 minutes, turning occasionally until they are tender and have grill marks. Remove from grill and keep warm.

Cook the Salmon

    Grill the Salmon

    Using the same grill, cook the marinated salmon fillets for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork. Remove from grill and let rest for a few minutes.

Prepare the Mashed Potatoes or Rice

    Make Mashed Potatoes

    In a pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter, milk, and salt. Mash until smooth and creamy.

    Cook Rice

    In a saucepan, combine 1 cup of uncooked rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed and the rice is fluffy.
