    Prepare the Breading

    In a mixing bowl, combine all-purpose flour, cornmeal, dried dill weed, dried parsley, salt, and black pepper. Mix well and set aside.

    Prepare the Egg Mixture

    In another bowl, whisk together the eggs and milk until well combined.

    Batter the Walleye

    Dip each walleye fillet first into the egg mixture, then dredge in the flour-cornmeal mixture, ensuring an even coating.

    Fry the Fish

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the battered walleye fillets and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Prepare the Vegetables

    Slice the tomato and onion into thin rounds.

    Assemble the Sandwich

    On the bottom half of each ciabatta roll, place a lettuce leaf, followed by a fried walleye fillet. Top with slices of tomato and onion, and generously spread dill remoulade on the top half of the roll. Close the sandwich.

    Serve the walleye sandwiches immediately with extra dill remoulade on the side, if desired.
