    Chop the Vegetables

    Finely chop the onion, green bell pepper, tomato, mushrooms, and broccoli florets. Roughly chop the spinach.

    Beat the Eggs

    In a mixing bowl, crack the eggs and beat them with a fork or whisk until well combined. Add salt and black pepper to the eggs.

Cooking

    Sauté the Vegetables

    In a non-stick skillet, heat olive oil over medium heat. Add the chopped onion, green bell pepper, mushrooms, and broccoli. Sauté for 3-4 minutes until the vegetables are softened.

    Add Spinach and Tomato

    Add the chopped spinach and tomato to the skillet. Cook for an additional 1-2 minutes until the spinach is wilted.

    Add Eggs

    Pour the beaten eggs over the sautéed vegetables in the skillet. Swirl the pan gently to ensure the eggs cover all the veggies.

    Cook the Omelet

    Let the omelet cook undisturbed for about 3-4 minutes until the edges start to set. If using cheese, sprinkle it over one half of the omelet.

    Fold and Serve

    Once the omelet is set but still slightly runny on top, use a spatula to gently fold it in half. Slide the omelet onto a plate and serve hot.
