Method

For the Veggie Patty

  1. 1

    Prepare the Veggie Mixture

In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

  2. 2

    Add Ingredients

Add cooked quinoa, diced red bell pepper, grated carrot, chopped cilantro, minced garlic, cumin, salt, and black pepper to the bowl. Mix until well combined.

  3. 3

    Form Patties

Gradually add breadcrumbs to the mixture until it holds together. Form the mixture into 4 equal-sized patties.

  4. 4

    Cook the Patties

Heat olive oil in a large skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown.

For the Toppings

  1. 5

    Prepare Toppings

While the patties are cooking, slice the avocado and tomato, and prepare the lettuce leaves.

  2. 6

    Melt Cheese

In the last minute of cooking the patties, place a slice of jalapeno pepper jack cheese on each patty and cover the skillet to melt the cheese.

For Assembling

  1. 7

    Assemble the Burger

To assemble, place each veggie patty on a whole wheat burger bun. Top with garlic aioli, melted cheese, avocado slices, lettuce leaves, and tomato slices.

  2. 8

    Serve

Serve the vegetarian burgers immediately, with extra garlic aioli on the side if desired.
