Mix Ingredients
In a large mixing bowl, combine the grated potatoes, chopped green bell pepper, onion, mushrooms, broccoli florets, diced tomato, cheddar cheese, salt, black pepper, and garlic powder. Mix well until all ingredients are evenly incorporated.
Cooking the Hashbrowns

Heat the Oil
In a large skillet, heat the olive oil over medium heat. Ensure the oil is hot but not smoking.

Cook the Hashbrowns
Add the potato and vegetable mixture to the skillet, spreading it out evenly. Press down gently with a spatula. Cook for about 5-7 minutes, or until the bottom is golden brown.

Flip and Cook
Carefully flip the hashbrowns over using a large spatula and cook for an additional 5-7 minutes on the other side, until golden brown and crispy.

While the hashbrowns are cooking, toast the bread slices to your desired crispiness. Once toasted, spread butter on each slice.
