    Peel and grate the potatoes into a bowl. Place the grated potatoes in a clean cloth or paper towel and squeeze out excess moisture. This will help ensure crispy hashbrowns.

    Dice the green bell pepper, onion, mushrooms, and tomato into small pieces. Cut the broccoli into small florets.

    In a large mixing bowl, combine the grated potatoes, chopped green bell pepper, onion, mushrooms, broccoli florets, diced tomato, cheddar cheese, salt, black pepper, and garlic powder. Mix well until all ingredients are evenly incorporated.

Cooking the Hashbrowns

    In a large skillet, heat the olive oil over medium heat. Ensure the oil is hot but not smoking.
