Method
Potato Preparation
- 1
Cut and Soak the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick). Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
- 2
Drain and Dry
After soaking, drain the potatoes and pat them dry with a clean kitchen towel. Ensure they are as dry as possible to achieve crispy fries.
Frying
- 3
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for accuracy.
- 4
Fry the Potatoes
Carefully add a handful of the dried potato strips into the hot oil. Fry in batches to avoid overcrowding. Fry for about 5-7 minutes until they turn golden brown and crispy.
- 5
Remove and Drain
Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Season immediately with salt.
Flavoring
- 6
Add Flavor
Once all the fries are fried and drained, drizzle the truffle oil over the fries while they are still hot. Toss to coat evenly.
- 7
Garnish and Serve
Sprinkle the grated Parmesan cheese, chopped fresh parsley, and black pepper over the fries. Toss gently to combine, then serve immediately while hot.
